Sodium citrate, also known as sodium citrate, is a white crystalline granular or powder at room temperature, odorless, with a cool and salty taste, and stable in air. Its relative density is 1.857 (at 23.5°C). It loses crystal water at 150°C and decomposes when heated continuously. It is soluble in water, with the pH of its aqueous solution being approximately 8, and difficult to dissolve in ethanol. It is prepared by neutralizing citric acid with sodium hydroxide or sodium carbonate, followed by concentration and crystallization.
