Sodium Bisulfite (NaHSO3) is a white, crystalline powder that is commonly used as a food preservative, antioxidant, and bleaching agent. In the food industry, it is used to preserve the color and flavor of dried fruits, canned goods, and wine. Sodium bisulfite is also used in the manufacture of paper, textiles, and dyes, as well as in water treatment as a disinfectant and dechlorinating agent. Although sodium bisulfite is considered to be safe for food use at approved levels, it can cause allergic reactions in some individuals and should be used with caution.
